It’s been 10 long nights since I updated the blog, what a week it has been.  Do not confuse this with a lack of drinking, just a lack of creative writing.  So last Saturday night the drink of the day was prepared by my lovely wife – the Pineapple Cocktail.  Not only did she find a cool drink, she went all out with the sugared rim and pineapple and cherry garnish!  Let’s see how it goes.

  • 1.5 ounce pineapple juice
  • 1 ounce vodka
  • 1 ounce Cointreau
  • 0.5 ounce lime juice

Mix all the ingredients over ice in a cocktail shaker, shake, strain into a martini glass with a sugared rim and garnish with a pineapple slice and maraschino cherry.

Dave’s Thoughts:

  • Surprisingly, not as sweet as you would think and unsurprisingly, all you can taste is the pineapple.
  • There is liquor in here, but this is one to serve to your friends that want something sweet and fun that won’t get them drunk.
  • For a sweet cocktail this is very well-balanced.
